The design of this cross-sectional shape—specifically, the judgment of where and how much to preserve the thick portions called "meat" (niku)—is called nikuoki.
When cut from the side, the cross-section of a Japanese sword resembles a diamond shape that is symmetrical left to right, with the shinogi (the ridge line at the center of the blade) as the apex, becoming thinner toward the kissaki (blade tip) and following a different slope toward the mune (spine). The surface from the shinogi to the kissaki is divided into the shinogiji and the hiraji, and the "thickness of the meat" (also called kasane) and "curvature of the curved surface" of each are the design targets of nikuoki.
The quality of nikuoki can be felt in the "weight," "position of the center of gravity," and "feel when swinging (control in hand)" the moment one picks up the sword. To the trained eye, it is also visually apparent in the shape of the yokobikari—the band of light that appears on the hiraji when the blade is tilted. The basic design of nikuoki also changes depending on the type of construction (shinogizukuri, hirazukuri, etc.), so it is worth noting that even for the same "sword," if the construction differs, the philosophy of the cross-sectional design also differs.
The character of the cutting ability changes as follows depending on the thickness of the nikuoki toward the blade tip.

The swordsmith designs this balance taking into account the "intended use" and "material strength." If tamahagane has high carbon content and is hard, it can withstand thin meat; if carbon content is low, the decision is made to make it thicker to ensure durability.
The thickness of nikuoki directly affects the rigidity of the blade. When more meat remains near the shinogi, the "moment of resistance" of the cross-section increases, making the sword less likely to flex when subjected to bending forces.
Conversely, if too much meat is removed overall, the blade tends to flex more easily under blade pressure (the lateral pressure applied to the blade when cutting). If this "flexing" becomes excessive, it adversely affects the hamon, and in the worst case, can lead to blade breakage.
The balance of rigidity and flexibility in a Japanese sword is determined by the following three factors.
Experienced swordsmiths complete the blade by judging all of these factors comprehensively.
The thickness of nikuoki changes the overall weight of the sword and the position of the center of gravity.
When there is more meat in the monouchi (the area approximately one-third down from the blade tip), the center of gravity moves toward the blade tip, creating a feeling of "power being applied in the downward swing." This is suited for usage emphasizing downward cuts.
Conversely, the more meat remains near the shinogi or toward the hand, the more the center of gravity moves toward the hand, resulting in faster swinging and better handling. In applications such as iaido that prioritize quick drawing strikes, a center of gravity closer to the hand is sometimes preferred.
When appreciating swords, there is a method of viewing nikuoki called "yokobikari." When the blade is tilted at a shallow angle against fluorescent lights or sunlight, a horizontal band of light reflection appears on the hiraji. The width, shape, and smoothness of this band indicate the quality of nikuoki.
When the band of yokobikari is uniform and wide, with edges fading naturally, it is evaluated as having "abundant nikuoki." Conversely, when the band is thin and uneven, with edges disappearing abruptly, it is seen as having "sparse nikuoki" or "uneven nikuoki."
Tachi from the Koto period (Kamakura to Sengoku periods) often display abundant nikuoki, giving the blade "presence." In contrast, swords from the Shinto period (early Edo) onward tend to have thinner nikuoki overall, and it is believed that the background for this design shift was a focus on appreciation and formal wear rather than actual combat. This shows that the changing trends and demands of each era influenced even the invisible cross-sectional design.
While nikuoki is largely determined during the forging and forming stage, the final shape is adjusted during the polishing (togi) process. The polisher (togishi) uses whetstones to polish the blade surface, bringing out the swordsmith's intended nikuoki design and evening out the curve of the hiraji.
A skilled polisher reads "what kind of nikuoki did this swordsmith intend" and performs polishing to bring it out to the fullest. For this reason, it is sometimes said that even the same sword will have a different "feel of nikuoki" if the polisher is different. The collaboration between swordsmith and polisher is a crucial factor in determining the final quality of nikuoki. When understood not merely as a process for making the edge shine, but as the final process that completes the cross-sectional design itself, the appearance of a finished and polished blade takes on new meaning.
Nikuoki is a technique that is difficult to see from the outside, yet it is the source of the sensation that makes one feel "something is different" the moment one picks up the sword. This judgment, which affects all aspects of cutting ability, strength, and weight balance, can be said to be a design decision in which the swordsmith's experience and aesthetic sense are concentrated. What is common to swords called "famous swords" is that this invisible design is perfectly aligned with the user's intentions.
