The blade is heated to high temperature and then rapidly cooled in water, triggering a specific metallurgical transformation (martensitic transformation) in the edge zone that raises hardness to its maximum.
This step is technically extremely demanding. Failure can result in the blade cracking (called "kaeri"), warping, or failing to produce a hamon at all. It is one of the most telling tests of a swordsmith's mastery.
Before quenching, the blade undergoes tuchi-oki (clay application), in which clay is applied to the blade surface.
The exact recipe varies by smith, but typical ingredients include:
The thickness and pattern of the clay determines the shape of the hamon. The swordsmith carefully brushes on the clay to draw the desired hamon pattern.
After the clay dries, the blade is uniformly heated in a charcoal furnace.
The heated blade is plunged rapidly into a water trough (yaki-oke). Water temperature is typically 10–15°C (cold water is used in summer).

The reason the hamon gleams is the formation of martensite—a specific metal microstructure.
Martensite hardness depends on carbon content. At 0.8% carbon, martensite reaches HRC 65+ (comparable to industrial high-speed steel).
The clay application pattern determines the hamon shape.
